ok guys heres the recipe, it is for the oven but i cooked it to 160 then added the cheese and bacon on top.
i used swiss cheese slices on top also instead of the grated cheese
Bacon Mushroom and Swiss Meat Loaf
1 lb Good quality ground beef
1/2 lb Ground pork
1 sm Onion; finely chopped
1 Egg
1/2 c bread crumbs
1/4 c Evaporated milk
8 oz Grated swiss cheese
1 cn (4 oz) mushrooms; drained
1 pk (12 oz) bacon
In a large bowl add all but cheese and bacon. Cook and crumble the bacon, drain well and divide in half, placing 1/2 in meat mixture. Add all but 1/2 cup of the shredded cheese to meat mixture. Blend well and place in casserole dish. Top with cooked crumbled bacon. Bake at 350 for about an hour or till cooked through. Top with the rest of the swiss. Bake an additional 5 minutes or till cheese is bubbly.
Good looking grub crazyhorse....one of my next to do....smoked meatloaf...been doing them with beef,pork, pork sasuage and buffalo....good combo ya got there..thanks
Thanks for sharing the recipe, looks great! Always despised meatloaf as a child but have been debating on whether or not to try it again, only smoked. Maybe this will push me to do it.
I think I might surprise my brother sometime and throw it on a giant burger bun, would have to be awesome!
