Was digging through freezer looking for some canadien bacon the wife said was there. Ran across some homemade pastrami I forgot about first. Yum. Dont have rye, swiss, or russian or thousand island dressing. Will have to make do with what is on hand.

Slice of sourdough cut in half, buttered, placed into skillet to melt cheese and brown. I used gouda on one side and pepper jack on other. Why, because it sounded good.

Make the filling. Layer of the homemade pastrami, sauerkraut, and another pastrami. Into the pan to heat, flip til hot inside.

Didnt have dressing but did have some really good beer mustard from back home. Slathered it over the melted cheese.

This is really good with horseradish too. Contemplated pickles but didnt want to take away the strami taste.

Yum. For future reference, you can make Russian dressing in 5 minutes with stuff you (most likely) already have in your refrigerator. Ketchup, mayo, relish, Worcestershire, lemon juice, and if you like it, a bit of horseradish.

I think I'll try your version next time.
