I have had a hankering for some baby backs for a few weeks. Last weekend the local aldi’s shelf was empty. What a disappointment! This past Friday night when I stopped they had 6 racks on the shelf. Yup I need them all. I really like Aldi’s Baby backs. Nice and meaty and not much fat.

Getting the fire started with my propane burner.

Pulled them out of the package and pulled the membrane. Two racks with only a dash of salt ( wife has food allergies) and four racks with my rub.

* pastrami on the right side.

Six hours of smoke 225-250 spritzed with apple cider vinegar.
Can you tell witch racks were “plain” when started?

Sliced up with electric fillet knife and into foyal pans for reheating.

Ribs reheated well. Added some butter, honey and water and into the oven at 200 for 3 hours.

I am going to have to do more soon I only had 2 bones and they were gone.
 
I'll have to live vicariously thru you pics peachey, as I still don't have the gumption to fight with the elements around here. Ribs look fantastic.
