My pals here know that I just gave my almost new MES 40” to my oldest son to make room for a new Rec Tec that is due to be delivered next week!
I was a bit depressed wanting to smoke some ribs today but just not willing to stoke up my only remaining equipment “Locomotive Breath” big custom built on wheels. Seemed silly for just 2 racks of bones.
Then in the garage I tripped over my old tried and true WSM 14”. It was a gift from heaven. Heck. I forgot all about it. I think Case was the one that convinced my to get one.
I’m gonna light a fire! B
 
Nice, I like the table it's sitting on. The ribs look good, can't wait to see the finished shots. It looks like allot of wood for a 14?

BD,I just realized you've got the bottom grate on top! :eek:
I did it on purpose. I like to increase my level of difficulty. Any fool can use a WSM with the racks installed properly. They didn’t make me OTBS member for nuthin ya know.... (buffing fingernails on my bbq apron) lol.

I also have the 14.5 and rib rack.I've done some quality vittles on my WSM but once I went MES I've kind of neglected it especially with the really lame weather this Winter.We've finally been blessed with a day or two of tolerable weather here in the northeast so the little WSM is making its Spring debut with an angus rib roast for Sunday's race.I miss the smell of charcoal and wood.
 
Looks great. What are the benefits of the rib holders. Just curious
Lots of folks use them all the time.. typically I smoke my ribs flat. But in this case I have limited room on that tiny grate. So the rib rack allows me to put one slab on both levels of the smoker.
Other than that reason, I cant think of one. Maybe someone else will chime in on the attributes of rib rack cookin. B

The MES is a fine cooker. Used one for years and years. Great customer service too. B
