I found this old SS grate in my garage. I placed it over the supplied chip pan and will place my cast iron frying pan on it. I do have to sacrifice one grate and move the water tray up as you can see.

Looks fine to me.
The test is to see if it burns your chips, chunks, or pellets.
As long as you get smoke in your temperature range, it's great!

Personally, I only add water during a cold smoke.
 
That's funny Sonny, cause I'm just the opposite.
I add water to all my smokes, even in my offset, unless I'm cold smoking.
I guess we each have our own way of getting things done!

If it gets hot enough to burn the chips then it should be fine, and I can't remember the last time I used water.
