I used to have quite a few BBQ channels in my YouTube subscriber lineup. One by one they were dropped for a variety of reasons. Many parrotted inaccurate, untested info (1 hour on counter to reach room, which is impossible), or showed poor technique that made good video (like white smoke). They often made simple processes WAAAY more complicated than they needed to be, and encouraged a dependence on technology that would result in inconsistent results because no two similar meat cuts come from the same animal. Meat temp is a guide, not a destination. And anyone who indicates their method and temps will always result in perfection gets the ax in my channel lineup. There's no substitute for feel and experience.
