hello to all, I just got a "Brinkman" starter smoker from my kids for my b-day. I enjoy BBQ-ing, but this is my 1st foray into smoking meat. I'm a general contractor by profession, and enjoy being with my family. I found this site this morning and have signed up for all the info I can get. My kids also bought a rack of ribs for me to smoke/grill for dinner tonight, so no pressure here to get it right the 1st time. I'll let you know how it goes, or what pizza special I got

Just use the 3-2-1 method for spares or 2-2-1 for Baby backs and you will be fine.  Good Luck.
