Corned Beef and Cabbage Slaw Tacos

Started the day off when I found a Corned Beef point on clearance for $2 a pound. Tossed that in the crock pot on High for about 4.5 hours until it shredded easily.

While that was cooking, I made a batch of Jalapeño Garlic Cilantro Sauce and let those flavors meld in a Mason jar in the fridge for a bit. After that was settled, I made a batch of Blue Corn tortillas and let them hang out for awhile.

Once the point was shredded, I mixed up a bag of shredded coleslaw mix with the Jalapeño Garlic Cilantro Sauce instead of the usual Mayo mixture.

Laid down the tortillas in my homemade stainless steel Taco Holder, topped with shredded corned beef and topped with the cabbage slaw.

Where in God's name did you find the blue corn Massa ?
I'm surrounded by Mexican stores, and tortilla factories, and I can't find it normally, it's a once or twice a yr deal around here.
Points for the homemade tortillas, they look amazing!!!
I might have to send you some cash to get me a bag or two of that Massa, if it's readily available, I love the stuff!!!

It's common in the Walmarts in the ethnic food aisles. Closer to the top shelves in my area.

Charlie, they even carry the brand I use, before I order some up, I'll check my local Walmart, I honestly never thought of looking there.

That's what I used as well.. I think it was under $3 for a 2 pound bag. I hope you find it!
 
That's certainly stepping outside the box. I'm not certain I'm that adventurous. Looks interesting though.
