Smoked corned beef and cabbage

Just told the boss I was tired of cabbage, then you go and post this.

I love cabbage. Usually roast it, but I will have to smoke some soon. Was your beef salty ? One rinse/soak doesn't seem like enough.
Not salty to me but this depends on the brand and the person eating it. I do 3 or 4 water changes and I think that helps speed it up. The salt wants to equalize in the water solution with the beef so the lower salt content in the water the quicker that happens. I buy corned beef for the salty cured beef flavor. If you are sensitive to the salt you might try going 2-4 hours with 5 or 6 water changes, I heard of some folks going overnight. This was perfect for me and serving it shredded/chopped in a bowl of cabbage further reduces the overall salt.
 
Not even sure if I'm a fan of cooked cabbage... but dang! I'd sure take a bite of that! Thinking I'd want a little bit of bite!

Damn, everything looks KILL'ER!!!

I've cored out whole cabbage, then cut a little off the round end so it stands up.
Then I add a whole cube of butter, S&P, or your favorite rub, diced Jalapeno, and a mound of chopped bacon. I lay down a sheet of foil inside a foil pan, then smoke at 275 for an hour, then wrap it in the foil I laid down, for another hour. It turns out great, even people that hate cabbage like it.
