Here are some pics of a nice pork roast and one of three chops that were part of my smoke today.....
Smoked them with Hickory and Maple and then enjoyed them with the Lexington sauce from Debi's recipe file. I was hoping to have my wife pull the roast - but I pulled it from the smoker at 160 degrees instead of foiling it and letting it go above 200. We have a pork butt for next weekend to try and get it right.
I did a Tip Roast and you can see how it turned out in the Beef section....
