My second time doing this, the first time ended in failure as the bacon failed to cook.

And in advance, thank you for any information, comments, likes, pointers that you do share for me and everyone else

Those look good. I like the way the stuffing looks. Those are sweet peppers though and not jalapenos. Either way nice job
 
I think they look good. You didn't say what temp you smoked at...Bacon will cook Crisp at 300+. Since you stuffed with sausage rather than cheese, the is no reason not to put some low and Slow smoke on them, then Crank the heat or finish in an Oven...JJ

sure looks good! Haven't done these for awhile...gonna have to change that.

When i do these I use sweet peppers a lot. often times i will partially cook my bacon first about half way in the oven (13 minutes @425) and then wrap and finish in the oven as a complete pepper or on the smoker. Just makes life easier.

Btw sometime try pabalano peppers that is an awesome meal!

What changed in your technique?
I started cooking on the top under a high heat and then reduced the temp and flipped them to cook until done. Bacon on top crisped up and held everything in and when I flipped it the rest cooked just fine.

Cooked at 350° at first then down to around 300. Stuffed with bratwurst, cream cheese and shredded cheese.
