Thanks All for your kind words and likes. It was a great meal. The nice thing about making Jus to serve Au Jus, is you can always make a bigger batch, 6 Cups in this case, then divide it, thicken half for Gravy, and give folks a choice or Both!

There was a 1/2" thick hunk of just the Eye of the roast left over. My Wife snatched that up, and put It and the Leftover Jus in a container for herself! I shot her a, What The... look and she said, " WHAT? You have the 3 Bones to snack on, I'm taking This! "
