Thanks y'all... and thanks for the likes as well...

Uncle Eddie.. I started Fri. evening... got them all ground up and weighed out into 5 lb batches...
Started mixing seasonings and cure on Sat. morning... stuffed half of them Sat. evening after they cured for 4 hrs (or more)...

Put those that were stuffed (25 lbs) in the smokehouse Sun. morning.. they took 7 hrs to cook....
Stuffed the other 25 lbs Sun. evening and put them in the smokehouse Mon. morning... they took 7 hrs as well...

Started packaging up the first batch Mon. evening... did the other half Tue. evening after work ...

Ha wife should be mad more often look at what you did. Awesome post Jack and nice looking snack sticks.

Great looking sticks! one thing I learned after making many many snack sticks is stuff them as soon as you can. You can let them sit after that. The meat will really stiffen up after mixing if it sits. I have an 11lb. Hakka 2 speed stuffer and I still use my Gander Mt. 5 lb stuffer with steel replacement gears. Trying to push it through the 1/2" or 11mm tube requires a lot of pressure. When I used the 11 lb unit I was afraid the handle was going to snap off...........
 
I know this guy who is going to be selling his like new LEM 5lb with metal gears, plastic and SS tubes because he is getting a LEM 20 lb motorized.......EH

Let us know how that motorized unit works for snack stick 21mm casings. I might need to upgrade as I make around 1500 sticks a season.

My problem with that is refrigerated space... I can store it in totes or ziplock bags easier in the fridge before it's stuffed ...

Looks like you did a great job on the sticks. On mine, I use 90/10 ground beef. Do you make any other kinds of sausage?

I believe I will be taking the smokehouse and all the necessary equipment to the S. Fl. Gathering for some hands on tutorials (guess I will post this on the thread) ... That's the main purpose of the Gatherings is to watch/learn each others techniques which we are all more than willing to share ... You are more than welcome to come join us.. If not a camper there are motels close by...

But as I say.. keep trying... you'll get it ...
 
I'll try to make that one. I may be hunting in Kansas then. I learned a lot of stuff from you, boykjo, dougmays, and pineywoods at the last N. Florida meeting. Just can't learn it all I guess.
