Since I changed from a vertical smoker to a horizontal smoker I have been struggling to get ribs just right for my taste.  2-2-1 and 3-2-1 seem to turn out too mushy for my taste.  I'm sure it's due to the temps the smokers ran.  I went back to no foil but they were a little tough..  Right in the middle is 4-1-1 so you got to try it, right.   Today I smoked a couple of racks of trimmed spares. Bingo!  The right amount of tenderness with a little tug when you bite.  IF I can duplicate, I'm sold on 4-1-1.   

As a side note:  Spare Rib trimmings are sure great for those that can't seem to wait for the ribs to get done.

They look awesome Ken.  When I unfoil I usually pull an end bone off.   Wouldn't do to serve bad ribs.... you gotta taste them.  :-)
 
The taste test has to come from somewhere.  In my 52 years, I do not believe I have ever seen a complete ham on a table.  There has to be a pinch, pull or nibble from somewhere.  LOL.

I hear ya.   When I pull a butt I'm usually half full before I even sit down to eat.   The man that smokes all day has to get that most tender piece of loin out of that bad boy!   :-)
