3 briskets and some babyback in new smoker

Hey folks!

Last week, Kroger had a sale on brisket for $1.77lb but when I went there was only one left so I got a rain check.
Went back yesterday to get 3 at cheap price and Kroger had marked their choice briskets down to $1.44lb!!!! I bought 3 (1 for my fam and 2 for friends.).
So today I’m smoking them.
They’ve been on smoker for almost 9hrs at this point and I have them wrapped.
FYI, I am trying it out today but I bought butcher paper from sams club for $18.98 a roll that is 1000ft long!!!! And to think I was gonna spend $18.99 for 175 ft.
I’ll let y’all know if it works well once I’m done. Brand is Duro.

I am smoking with pecan only. Smells so good.

Nice job on the brisket and ribs. Both are favorites around my house. Like stated above nice color.

Thanks Cornman. I’m about to take my first bite of brisket in eggs with jalepeno and cheddar cheese.
 
Some thoughts about this last cook:
It was my second cook on my new smoker (first cook was 40lbs of chicken wings so only like 3-4 hours burning sticks, not so long).
Keep temps steady was a task, I checked about every 30 min. Had some temp swings but generally kept it between 225-300. I used only pecan sticks to smoke with. Used quite a few. About 1-2 sticks every 30 minutes. Want to get some oak to use for main coal base and add pecan in there for flavor. Love how it smells and the sweetness it leaves behind.
Wrapped briskets in butcher paper from sams club. Got 1,000ft of it for only $18.99! Crazy good deal especially when they are charging $18.99 for only 175 ft of th pink paper. Only 994ft left!
Paper worked well. Still had a great bark, lots of liquid gold in there (except on brisket that I used tongs on which broke paper on the bottom and all the juice flooded out. Now I know why aaron franklin uses only towels to grab his briskets. Anyway you should see if your sams club has this paper.
I was pleasantly surprised by the smoke ring I got. And of course the money shot of the point cut in half. That’s what it’s all about and what you want to see when you cut open that brisket.
The flat also passed the pull apart test. First time I’ve gotten that part right. Flat is just tough to get right.
I cooked them for 11hours and for 3 hours of that time did a rack of babybacks that my FIL brought with him.
Got smoker cleaned out this morning and covered just as rain started to fall.

Great looking smoker and smoke, Very good looking meat. bet it was great tasting as well. Congrats on making the carousel.
