Family and friends like to have a little venison summer sausage for munching on during the holidays. Heres' some of the mix 70% venison and 30 % pork trim


Into the mixer for a spin



 Used  2/1/2 inch x 24 inch fibrous casings with a 22# stuffer


Sealed off with 1/2 inch hog rings ,the sticks held about 31/4 pounds each.


Into the smoker this am after resting in the fridge overnight.

I think its for 50 # ,I've never had over 30 or so ,works well for large batches.
 
So far so good................................
 
Lookin good CM, I'm makin some venison sticks this weekend !

Here are the finished results But no money shot as the sausage is still blooming. First is the shower in the snowbank


 Here they are blooming after an 8 hr smoke with IT of 154

Nice job on the summer sausage. I'm with you on the snow, as long as we have to live in it we might as well use it.
