I use pans to, but that is because I do foil for 170-205* . It keeps juicier and my family does not like a hard bark..

I was curious what the end of your meat thermocouple looks like. I recognize that silicone covered K-type thermocouple, i use a fluke as well, but I've only run that into the my cabinet for air temp?  Does it have stainless probe on the end that we just can't see?
