2 brisket smoke

My son graduated from highschool last night so lots of family in town. Doing 2 - 14lb briskets today. At $10 a lb I better not screw it up. Just salt and pepper, they went on about 2 am this morning.

After looking at this photo I moved the lower brisket up to the top rack. Water pan below steaming away........

I use oak on top of chunk charcoal.

Perfect bark, looks like bark and the taste had bark. Everybody was happy. I did 7ish hours on the smoke then 5 more wrapped.

Prime cut from a local butcher. Seemed expensive to me but I'm supporting a local business.
