13lb whole ribeye. Advice on slicing?

Guys & gals, Ray's had 1 of their meat sales & I purchased my 1st whole ribeye.

What or how is the best way to slice it up into steaks & vacuum seal individual steaks.

I don't have any processing equipment, but got lots of knives.

I do them into steaks and roasts , then trim the steaks to my liking . easier to see the fat cap that way .
 
Nice! It not a hard process. You can clean up the edges and trim some fat or just slice nice and thick. I'd keep one large chunk in roast form for future prime rib and leftover sandwiches. You can also season the steak before going into the vacuum sealer. Saves a step later on.

Ok thanks everybody. Yes I was going to cut a roast off 1 end. Then some thinner slices for sandwiches. Then the rest into steaks.

I wish I could have bought 2 of them at the price it was sold at.

When I pull this whole ribeye out of the cyro-pak. Do I need to rinse it in cold water before trimming/slicing.

Here's the yield from one I did at the end of the summer .
3 people eating here , so I cut steaks in 3's . A couple roasts and some grind .
Not much waste on that one . You can always choose to slice the roast or do them whole .
2 trays , a cutting board , and those knives was all the equipment used .

Nice! That must of been a big whole ribeye! 17-20lbs?

I would not rinse unless there is some bone dust or excess blood, left over from the butchering process.
Since it is boneless, will it have beef ribs?

Lmao I am a total newbie to this type stuff.
No bone, just delicious meat and fat. You'll see where the ribs were.

I saw a video last week were a guy was using zip lock bags and a straw to suck the air out of the ziplock bag prior to freezing. I know there are several ways to accomplish removing the air from a freezer bag but I thought this was a very easy and cheap way to utilize a freezer bag in lieu of a food saver type apparatus.
 
I trim it up and slice into 1” steaks and vacuum pack them into bundles of three. I use my brisket knife since it spans the whole width. Freeze the fat trim for sausage. Wish I could find a deal like that. Last whole choice boneless I got from costco was $16 / lb. Used to get prime til prices went out of this world.

I bought 38lbs worth last year when they went on sale for $4.99. doubt I will se that this year.
