    pitt boss xl brisket

Did a brisket on the pit boss xl. Rubbed with salt, pepper, and garlic powder. The last one I tried turned out pretty dry when I set my temperature to 250. This time I planned to keep a lower temperature 225 and add a water pan. I've never tried a water pan in a pellet grill but figured I'd...

    Beautiful day

Absolutely perfect day today here in Michigan to put out some good bbq. Got two back ribs and a picnic shoulder on the PB Austin XL. Using lumberjack hickory pellets. Plan to foil everything in a couple hours. Never done a picnic but store was out of the butt roast. Followed advise on here to...

    Advice on adding smoke

Second the lumberjack pellets. Also I dont have a vertical but I have a grill style. The smoke setting will provide more smoke flavor but the temps are usually around 180-195. I've added supplemental smoke to my grill via the amazen pellet smoker and its helped greatly

    Jerk Chicken

This is actually where I got my pellets and chips. I will say I use apple pellets for the heat and then use amnps with the pimento pellets. Turned out great. Also had some leaves in water on the grill.

    Jerk Chicken

Turned out great. I'd even use the marinade on just the white meat and grill it traditionally on my weber gas with a packet of pimento smoking.

    Jerk Chicken

Got my jerk chicken ready to go on tomorrow around 10am. Marinating now in a homemade sauce. I have a pellet grill that I'll use some special pellets I bought made from real pimento wood. In the past I've used chips with my MES so hopefully these pellets works as well.

    Brisket

Had family coming over so had to bump the heat to 300 and only rest for an hr. Point was amazing and the flat a tad dry. Still pretty good.

    Brisket

Going to hit 40 here in Michigan today! with it being the super bowl figured I'd get a brisket going. Pit boss xl with the amnps. Set it for 250 with temps swinging 230-275. Will wrap with butcher paper after 5 hours.

    Smoking Baby Back Ribs

I also think the 2-2-1 for babybacks works best. I have omitted the mustard and now just rub the ribs with the rub the night before asnd throw them in the fridge overnight. I use a pellet grill asnd use hickory lumberjack pellets and then add the amnps maze with a hickory/cherry mix. Without...

    Pit boss xl temps

Thank you for the reply. I reached out to smoke daddy via email and he advised the diffuser he makes wouldn't fit in my pb xl. I think I might try the bricks and see how that goes.

    Pit boss xl temps

Anyone else have a 100 degree variance from left to right on their pit boss? Set temp for 225 and from the center right it was 250-325. The left side stayed right around 225. It was 45 with a little wind. I do have the cold weather cover attached
