Absolutely perfect day today here in Michigan to put out some good bbq. Got two back ribs and a picnic shoulder on the PB Austin XL. Using lumberjack hickory pellets. Plan to foil everything in a couple hours. Never done a picnic but store was out of the butt roast. Followed advise on here to trim the fat and skin. Temps right around 220-250

Just treat it like you would a butt except start probing for tenderness at 190 degrees.
My last two picnics were probe tender at the 195 degree mark.
Though, you can take the IT up to 203-206 degrees with no worries.
