The problem might actually be the meat itself. I ran into the EXACT same problem when I bought some ribs from Walmart. Some brands brine their meat in a salt solution to keep them fresh longer. Check the labels for sodium content. You’d be surprised home much salt is already pumped into some. I...

with the spare rib cut there’s more pieces either with those smaller bones or no bones at all. It’s probably more than 6 pieces just a big scoop to fill the box but there’s a lot of meat.
I currently don’t sell ribs at all. There isn’t any money to be made when I have to pay roughly $10 per raw rack and food cost at a restaurant should always be under 30%. The $20/$30 prices were based on other local restaurants.
I’m looking to offer a lower cost option for ribs. Not everybody can afford to spend $20/$30 for a half or whole rack. I plan on offering this as a Meat and 3 lunch special. Seasoned, smoked and lightly sauced. Served with Mac n cheese, beans and probably cornbread for $8 or $9.

I’m a little late to the party. I agree with some of the other posts- an amazn smoker tube can help pellet smokers... but it’s still basically a convection oven because there is a fan that stokes the fire and controls temp. I’d recommend electric smokers over pellets but that’s just my opinion...
