    Side rib dinner

Smoked a rack of side ribs. They went in MES for 2 1/2 hrs at 250F using maple wood chips. At 2 hr mark, I got offset barrel smoker going and put ribs on indirect for 1/2 hour. We had a pasta salad leftover from last nights dinner and that along with some cherry tomatoes was our side dish. FYI...

    Pork belly

Smoked a pork belly for about 3 1/2 hours in the MES. I had lit the OKI Joe and moved the belly across. LOts of flavour. I used maple wood chips. Served with a tomato, cucumber and watermelon salad my wife made and she also made a quick cheese bread. Tasty all round. Oh, go to use my new, cool...

    Burger night

Made a beef burger seasoned with paprika, garlic, tarragon and mustard and some chopped up shallot. We used tortillas which I toast on the grill for a few seconds instead of burger buns. Topped with blue cheese. Grilled onion rings. I was using mesquite wood chips.

    Smoked meatloaf

Smoked a meatloaf this afternoon. Used a recipe from Michael Symon. There are three twists to it: 1. Saute the vegies first before incrporating them into the meat. 2. After putting 1/2 the meat in the pan, put down a layer of meltable cheese. We used provolone. Put the rest of the meat mix on...

    Turkey burger

Diced up some jalapeno, sweet pepper and mushroom and mixed into ground turkey with about TBLS of dried thyme. Put burgers on as well as french fries. I used a smoker box with hickory wood. Tasty! I toast the buns as well. Check them frequently. My rule is: put buns on direct and go back to...

    Quarter chicken dinner

Smoked 1/4 chickens in MES at 250F for 3 hrs. The plan was to move them to grill but started to drizzle when I was getting set up and forecast to start raining any minute. Left chicken in the smoker. Sooooo, it stops drizzling. Oh well, the chicken was quite tasty. I learned a few cooks ago to...

Beef ribs and corn on the cob (in the husk) + BBQ sauce!

Started a rack of beef ribs that had a brisket rub on it in the MES. Set it for 3 1/2 hours at 240 using Jack Daniel's pellets. At about 2 hours started up the offset and ribs got on 1/2 hr later-ish. Put corn on direct over fire. Again, using Hot-Cold-Hot set up. Served up with a really tasty...

    Pizza cooked indirect

I put the stone with the pizza on it once I drop the coals. I put cold coals down and then hot coals on top in main barrell in Hot-Cold-Hot pattern with a pan in for water in Cold area. I try and make the Cold area almost as wide as the pizza stone. Before putting grates on, I put wood chips in...

    Pizza cooked indirect

John: I do use a stone. We use pre-made for convenience. We have made from scratch and just the time and timing made pre-made easier :D

    Pizza cooked indirect

Made a pizza from scratch (ok, we buy the dough). Veggies, Salami, CHEESE and black olives. Put on indirect in OKI Joe for about 40 minutes. Dough comes out for most part fairly light and toppings are flavourful.

    Burger night

Yup, our Friday tradition continues. Tonight was a pork burger and I had some sweet pepper left over from last night, diced that up and some white onion and mixed in along with thyme seasoning. All three of us liked it! Served it with grilled onion rings.

    Roast beef

I smoked a roast this afternoon for about 4 hrs at 250F in my my MES. Used hickory. At the 3 1/2 hr mark, started my offset (OKI Joe) and transferred the roast onto indirect for 1/4 hr. It gets a nice smoke taste. After I do all this of course I read from last time I did this to wrap the meat...

    Country style ribs

Smoked country style ribs in the smoker. Put in at 260F for 4 hours. I wrapped them 1/2 way through and think it gives a more tender product. Made a batch of bbq sauce (ketchup, brown sugar, molasses and some seasonings. IT's a nice thick sauce (DUH, go figure with molasses) My wife made up a...
