Been busy for a while with vacations and stuff around the house but I did get a chance to do some canning. I took a lot of pictures of each of the steps. I'll explain them in detail. If you have any questions, let me know
It's my buddies recipe and everything he makes is excellent. He adds this recipe to a pound of ground beef, or meat of your choice and then add one cup of ketchup
One time I tried it is all it took. I bet you I can eat it on my eggs in the morning and with nachos at night there's really no way I can't eat it. I hope you find it as good as I do.
12 cups zucchini skin removed
4 cups of onions
Six Mixed bell peppers. Centers removed
Throw all this in a food processor, and chop it up
Add 2 tablespoons salt to it and mix well
After an hour, drain it well , but don't rinse it
Add 1 tsp of each: celery salt, 1 tsp dry mustard , then
3 cups sugar
2.5 cups white vinegar
Bring all ingredients to a boil, then simmer for 1 hr
Prepare glass jars to sterilize and warm
After the hour, add a tablespoon of cornstarch, that was mixed with tiny bit hot water, and stir few minutes
Then start adding the mix to the sterilized hot glass jars leaving a quarter inch of headspace
Wipe
the rim with vinegar, placedthe lid on, tighten down and set gently on a nice thick towel to cool
After about 15 to 20 minutes or even less you should hear the lids popping like a sound of music to my ears
Let them cool overnight takeoff the lids and wash the jars gently in lukewarm water let them dry
You can store with or without the rings
Once the seal is made, there's no reason for that ring to be on there unless you prefer it for storage
I was told years ago by a good friend to store them without the rings this way if one does break seal during storage time, you will know because you'll smell it lol.
I don't really know if this is true or false, but I have stored both ways it's just a matter of preference, I think. Lol.
