Looks awesome. The first and only time I have been able to try quail was quite a few years ago when I went with my buddies to watch one of the NDSU Championship games in Frisco Texas.
For lunch we tried a Mexican joint I had the quail and was blown away. It was kind of funny because we got there close to opening time and soon realized that us in our NDSU sweatshirts and jeans were very underdressed compared to the other people that started showing up, the service and how we were treated was amazing and an experience all in it's self.

And I bookmarked this thread, so I can try the marinade, it sounds excellent.

Quail are by far the stinkiest smelling bird to clean, they smell worse than diver ducks or Canadian geese, but man are they delicious, by far my favorite bird to eat.
I've never had farm raised Quail, just wild Bobwhites and CA Mountain Quail, which are the largest Quail in the US.

Second best eating bird in CA is the Greater Sage Grouse.

I really need to get after them again this year, although I'm dogless right now.
Time to fix that, although I don't feel like spending the time to train a new pup, been there, done that.
So I'll have to drop the big bucks on a field trial drop out, which can go for $10.000 or more depending on how advanced you're looking for, and the lines you choose from...OUCH!!!:emoji_joy:
 
Of coarse Konrico is out of stock, on their website.
Is that rice readily available at your grocery stores?
If so I may need to hit you up, I'll make it worth your time.

Thanks! They were stuffed with some kind of fresh sausage...Cajun fresh sausage were I to venture a guess. Packed some heat, which helped the mildly seasoned quail. Also brought some juiciness with the fat in the sausage.
 
FYI-you can also find the Steen's cane syrup at that Cajungrocer site....but in a pinch molasses will work. But molasses is more bitter....but it is close.

That is THE site where all the Cajun's living around the country buy their stuff from. It was started/founded by a grocery store in Metairie, Louisiana specifically to sell to people who have moved away from the area. They got so many call ins to ship stuff across the country that they started an online store.

I order stuff from an Italian store in Brooklyn NY called Frank & Sal's, that my Nona used to order from.

Their fennel sausage can't be beat, it's so close to the sausage Nona used to make it's scary. I've tried to make a copy cat recipe and I can't get near it, it drives me crazy.
The closest I've come to it, I toasted the fennel extra dark, next time I'm gonna try adding fennel pollen as well as toasted fennel.

They have been gone around here for a while but are coming back. I am seeing the occasional lone quail but no coveys yet.
