Fired up the offset. Just simple with beans and slaw.
 
Care to share the scotch eggs recipe?
I didn’t really follow a recipe. I don’t make these often and not sure why because they are delicious.

Here is what I do,

Soft boil some eggs. I went 8 minutes, but you will have to adjust your time for elevation, cold water bath then peel and refrigerate for about an hour or longer. Then take a nice patty size of breakfast sausage or really any bulk sausage and form it around the egg sealing it up. I then wrapped a strip of bacon around each one , but you don’t have to use bacon. Then on to the smoker and cook just until the sausage is cooked through and bacon (if using) gets some texture.

You can fiddle with the process and try to end up with a runny yoke. Mine are usually hard boiled but just barely so the yoke is a bit soft.

I have never done Scotch eggs, but always mean too. Will be trying them.
 
Heck yeah! Glad someone can do scotch eggs better than I can HAHA mine always end up unsoft in the middle!
 
Dang those look good, haven't made those for quite some time. I used seasoned deer burger previously. My fishing buddy loved them.

I am a sucker for scotch eggs. Unfortunately we usually make 1/2 dozen or so to use up the sausage and it's too much to have around. They taste great, but not the healthiest of things to be eating.

Thanks Charlie. I think the secret to yoke consistency is obviously the boil, but cooling down then refrigerate until the core of the egg is good and cold. Then wrap in sausage and cook hot and fast so as not to raise the yoke temp much past your initial boil. Best of luck.

Looks Great Eric! I have not had Scotch eggs in a long time. We use to make them on occasion at the duck camp. Great duck blind snack mid-moring for sure!
Thank you Keith. These kind of get forgotten but really should be in rotation more often, easy and straightforward but so delicious and a bit of a blank canvas as far as possibilities.
 
nice job! that food looks killer!

bacon and hard boiled eggs are one of my favorite breakfasts. those eggs got me thinking about that. lol got a hankering to try these with a bacon twist. mix a good percentage of crispy crumbled bacon in that sausage? you know for health reasons. :)
