I have never done Scotch eggs, but always mean too. Will be trying them.
Thanks Charlie. I think the secret to yoke consistency is obviously the boil, but cooling down then refrigerate until the core of the egg is good and cold. Then wrap in sausage and cook hot and fast so as not to raise the yoke temp much past your initial boil. Best of luck.Heck yeah! Glad someone can do scotch eggs better than I can HAHA mine always end up unsoft in the middle!

I hadn't done these for awhile, very easy to make with few ingredients- semi soft boiled eggs-2 pounds of Jimmy Dean sausage( 1 reg. and 1 hot) and a rub of your choice.

Mix the sausage together well and form meatballs ,I like to flatten the meatballs out like shaping a pizza dough crust before adding the egg.

All rolled in the rub and headed to the smoker.

Out of the smoker after a 3 hour nap with cherry chips at 225*.(One missing :) )

I am a sucker for scotch eggs. Unfortunately we usually make 1/2 dozen or so to use up the sausage and it's too much to have around. They taste great, but not the healthiest of things to be eating.

These kind of get forgotten but really should be in rotation more often, easy and straightforward but so delicious and a bit of a blank canvas as far as possibilities.Looks Great Eric! I have not had Scotch eggs in a long time. We use to make them on occasion at the duck camp. Great duck blind snack mid-moring for sure!
