I posted this recipe back in 2021, but it is so good (IMHO) that it deserves an encore. Pic before mixing is below...

Yesterday I double-smoked an 11-pound ham. Not because we needed an 11-pound double-smoked-ham, but because my wife has reached the point where she would rather skip eating the ham entirely and go straight to the double-smoked ham salad that I make from the leftovers.

The good news is that this recipe came from “my own kitchen” and not from one of the 47,000+ recipes my wife has saved on Pinterest. If you have ever seen her Pinterest account, you know she has enough recipes saved to feed a small nation through a three-year drought.

After a few hours in the refrigerator, the flavors meld and the spread and takes it to a whole new level.

Here is the recipe:

Double-Smoked Ham Salad Spread

Ingredients

  • 3 cups ground fully cooked (double-smoked) ham
  • 2 hard-cooked eggs, chopped
  • 2 tablespoons finely chopped celery
  • 4 teaspoons sweet pickle relish
  • 2 teaspoons finely chopped onion
  • ¾ (+/-) cup mayonnaise (start with a half cup and work your way up to suit)
  • 1 tablespoon prepared yellow mustard

Directions
Mix ham, eggs, celery, pickle relish, mayonnaise, mustard and onion in a bowl. Combine well and refrigerate until serving.

Looks and sounds really good. I doing a pulled ham next week and guess that would work for this.

I have always double smoked hams for events and always have some in the freezer, using the scraps and bones for beans. But my partner for the past couple years has gotten tired of fried ham slices for breakfast or ham and cheese sandwiches.

I just got a quart bag of ham chunks out of the freezer to pre-thaw in the frig tonight to make this. This will be super easy as I already have Amish Mustard pickled eggs in a gallon jar which flavors should fit in with some of the left over celery I froze after making gumbo a week or so ago. Everything else is handy.

Thanks for bringing your original back alive and re-posting. This site has been so popular with so many people that like "real" food that way too many great items like I think this is going to be have gotten buried by so many other great items, it is hard to keep up. Love it. Ha Ha

Ok, I did not get out the grinder but just chopped the ham as small as I could with a knife. Just had a bowl to dip with crackers for breakfast. Yummy ham and eggs and seasonings mixture of everything that is a staple in our hourse. Thanks.
