It's 6PM, the cook's almost done and you realise you're standing by the smoker warming your hands over the firebox....

Yeah, it's been like a yo-yo here, too.We had one week of freezing weather and then it's been back to the 60's. Crazy.
Oh, I'm not ready to pack it in just yet, but tending an offset at less than 40 degrees just isn't fun for me. Winter's the time for comfort food and a crackling fire (and sausage!).The summer is all over, but the smoking goes on. I smoke 12 months out of the year here in Maine. Gotta have fresh smoked meat.
