Hello, I'm new to the forum but been smoking for about two years now. Just recently really indulged in my hobby and smoke something at least 3 times a month. With giving my schedule is sometimes quite a bit but hey good food is always worth it. I've smoked all the standard cuts of beef and have had really good success with it. I've also smoked a little bit of elk and some deer meat which turned out pretty damn good. Most recently I got into smoking fish, particularly wild, fresh caught salmon. Now this weekend will be the first time I will be attempting pork, pork loin to be specific. I still consider myself new to this so I am very open to suggestions and pointers. For tools I use in my backyard kitchen I have : 1 Brinkman Vertical smoker and 1 Brinkman Box smoker. Lately my personal tastes have been getting more and more Cajun flavor to them so anybody from south want to throw me some ideas or anything Cajun I'd be more than thankful. About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
