Yes, I need to get rid of some of our Salmon that we caught last year, to make room for the upcoming Salmon season.. Here, I did 7 plus pounds worth.
Simple batch of Dk brown sugar with non iodized salt at a 4/1 ratio
Brining for 5+ hours
Here's our Siamese cat "Konabear" guarding our salmon while it is room drying to form the pellicle prior to smoke.
Mailbox mod feeding the wood to the MES smoker. Started out with Alder pellets, finish with apple. Smoked at 3 different low temps for 3+ hours until an IT of 140 was met. Cannot praise enough the Auber PID and mailbox mod. Great combination. So easy, so accurate.
Finished product cooling down. Notice no cat? Once it's cook, I can't trust her to be alone in the kitchen for she lloovveessss smoked salmon. Some of those chunks would end up on the floor in no time and then into a little furry belly.
