My Costco had wild sockeye salmon on sale and I thought...science. So, I made into lox to compare to the lox I made with farmed salmon.

Slices, very pretty

Unbelievably I ran out of bagels

For comparison, the farmed salmon

Pretty, but much more pale

But at least I had a bagel

It might be my imagination and the intense red color but the wild sockeye seemed richer tasting.

Wild sockeye is awesome... Deep rich flavor... Beats farm raise by a ton and then some... When I fished SE Alaska, I had my smoker on the boat and ate smoked sockeye all the time...

The sockeye looks fantastic!
I will have to try one on my next batch, my Sam's always has them.
