whole prime ribeye from costco for dry aging?

anybody get a whole prime ribeye from costco and dry age it? if so, how did it turn out? did you have to ask the butcher in the back for a special cut for dry aging purposes, or just grabbed one off the cooler? i just got back from my local costco, and they're priced at $10.99/lb. i guess that's reasonable.

I’m aging a prime brisket from Costco as a test right now (53 days in!!!). The ribeye is next, but I’m waiting until they come down some. It’s $10.49 per lb here now, but they reduce them to $9.99 from time to time.

yeah my concern with the whole prime ribeyes i saw at costco is that there was hardly any fat cap protecting the spinalis dorsi, or i just wasn't looking well enough to spot a good one. and i didn't want to blow $180+ on a gamble. but if people have had good results dry aging it, then i'll give it a shot.

I have one aging from there right now. It was $8.99 / lb. I got the choice cut because I didn't think it was worth the extra $ since was dry aging. I had to ask the butcher for a whole one because they didn't have any out. They also had prime, but it was $10.99 / lb. It will be at 42 days this coming Saturday...was hoping to cook it then...hoping the blizzard doesn't change that...

when you say you had to ask the butcher for a whole one, did you specify a certain cut, like 109a? or just "can i get a whole ribeye?"

the whole choice ribeyes at costco were around $100, so maybe i'll go that route instead of "prime" for my first try at dry aging.
