Please tell me more on how you're planning to do breakfast sausages in cider, sounds delicious. Are you talking literally just boiling them in the cider? Sorry I am new to cooking brats or sausage outside of a grill...

He's referring to putting the cider in the sausage meat paste in place of the water when making the sausage.

As Inda said, I'd replace all liquid it calls for with hard cider. Though..I could see some brats being good if boiled in hard cider. I've had chicken and wild rice brats that would be stellar in that. Ideas ideas...!

If you boil in cider, just be aware that the acid will attack the casings making them very soft. If cooked too long, the casing may split.

I know it is a manual grinder/stuffer, but as a city boy, I am not starting off making 30 pound batches (yet) and this is what my allowance would support. Now all I have to do is find casings. I have seen a couple websites mentioned. I know Costco has meat. Lets see: ginder/stuffer :emoji_ballot_box_with_check: Cure #1 :emoji_ballot_box_with_check: seasonings :emoji_ballot_box_with_check: charcoal :emoji_ballot_box_with_check: hickory/apple/peach/cherry :emoji_ballot_box_with_check: I think I am almost there. Oh ya, beer :emoji_question:

I make a run of Kielbasa every spring for Dyngus day celebrations, it's the same recipe with beer substituted for the water.
