I've been suffering from a chronic pain issue for a little while now, and am currently dealing with a major flare up. So, instead of making my situation worse, I left a note for my husband this morning asking him to go check out a local meat warehouse not far from our house.

I've never been in, and I believe it's mostly a wholesale provider for local restaurants. Either way, it was worth checking out just to see if they could be another great source for dinner.

I wrote out a separate note for him to simply hand to the butcher, detailing exactly what I wanted. Needless to say, hubby left the note at home thinking he'd remember or figure it out when he got there. That didn't work out so well for him. LOL

He never did reply back with how much $$$ it was. I'm afraid he may have had a heart attack when told the price. lol

BAHAHA great stuff! tip flip that around my wife wont even go in to the butcher with me - I cant image what would come home if i said "and pick up a full packer". bahahahahaha

I don't like buying briskets that are under 15 pounds. Too much of the flat is too thin at the end on smaller briskets. On bigger briskets I have more flat that DOESN'T get trimmed away for being too thin.

Just some food for thought there :)
 
Can I trim off the thin part, pop it in the smoker and take it off when it's ready ahead of time?

Absolutely!
I do something very similar because I don't want to be fooling around with trimmed meat at a later date and I like having it all be smoked brisket.

In short I have my setup where I fold/roll up that good trimmed flat meat (and any other good trimmed meat) and I throw it in a foil pan on a bed of trimmed brisket fat.
My brisket then sits on a rack that sits on top of the pan that catches all the fat and juices.
When the whole smoke is done, I pull the main brisket out and that trimmed flat meat has become burnt ends, chopped brisket, or a combo of the two. Super simple.

You can EASILY just do like you are thinking and throw it on the smoker and just pull it way earlier! This would be the "cook's treats" that you and your smokin buddies get to munch on while hanging out and tending to smoke :D

Let me know if this makes sense and for visuals of what I explained I have included the following where my trimmed flat can be seen folded up in the pan and then displayed with the tongs:

Oh my god you guys. I just got home and had a look at this hunk of meat. It’s literally the BIGGEST slab of beef I’ve ever seen!

It looks really great, the flat is nice and thick and doesn’t look like I’ll have to trim off anything.

Here it is, taking up an entire shelf in my fridge.

Chronic pain: I eliminated sugar and processed white flour. Decades of chronic pain gone in two days. If you haven't tried it, give it a shot.

I’ve done that several times over my lifetime, and currently doing it again. Basically a mashup between keto and Whole 30.
Unfortunately, my pain is much more complicated than that, but the other benefits of no longer being in a sugar or carb for is great!

What the heck is island soda

I’m not 100% sure! It may be an authentic Jamaican drink, or it might just be marketed that way for more sale. It’s basically a fizzy and overly sugary drink that my husband likes.
