Mine is cardamom. Use it in beans, soups stews among others. It's the thing people try to put their finger on when tasting but can't place it. Use in small amounts and gives dishes that unique flavor.
Either beer or starvation. Both work well for a lot of chef compliments too. LolBEER!
Also the ability to know what needs to be changed to bring that balance.Balance of flavor. It’s incredible how good recipes taste when you get them balanced.
I use it a lot in place of black pepper in sausages.Another one is white pepper .
