SoCal - making smoke rings!
Have a nice rack of BB ribs in cellophane in the fridge for next 3 hrs. A dry brine if you will! Rubbed with ground mustard, liberally, and Famous Dave's Rib Rub. Will smoke some jalapeño poppers with it the first two hrs.


Traeger Texas Elite 34 Apple pellets and a spray bottle of apple juice. Oh, a little Sculpin IPA and a cigar will make for a good day; LLBWS too! I've gone to heaven.:grilling_smilie:

I got a smoked hock from Thurns, it's the biggest hock I've ever seen. I boiled it until pull-apart, then cooked beans in that broth along with the shredded meat. That's all in the crockpot and it only needs to warm up while I make cornbread.

In other news, I got some chicken wings to play with, not sure yet what I'll do with them.
 
Today?  8 lbs of Costco pork sirloins I've had in a wet cure since August 5th.  Tastes more like ham than Canadian bacon, but they sure are good!  Will smoke them with hickory chunks to 140-145F IT, let cool, then vacuum seal and freeze what I don't stick in the refrigerator.

Wrapped and fridge for 3+ hours.


Wrapped up some poppers!


Wrapped in SMOKE!  Poppers for 2 hrs @ 225 deg.  Ribs for 4 1/2 hrs.  Same temp obviously.



Oh yeah!  That's apple juice in the squirt bottle!  Every hour.  Everything gets it!

Now, for some appetizers!


There were 16 of these.  Only 3 people wiped them out!  Musta been good!

I"m pretty sure I'm getting a raise, or at least a Xmas Ham  . . . to smoke !  Maybe even a couple of desirable phone numbers !  The reheat smell - even 2 days and 70 miles away - filled the hall and folks were wondering . . .

Just a note:  These were on sale.  Bought for $8.33.  I really didn't expect this quality of output.  The meat did not fall off the bone.  The consistency was . . uh . . . like . . er . . . butter !  No, really !!  BBQ sauce was a mix of 4:1 regular "Bone Sucking Sauce" and Kick Y'o Ass Teriyaki Habanero Sauce (shipped in from Goodyear, AZ).  Remarkable actually!!  Just the right zing and sweet and vinegar and . . . oh my!

Next weekend trying out Dutch Oven Fajitas on Sat. and was trying to figure out what Labor Day would bring.  Then out-of-the-blue I get a text from a friend who says her freezer just quit.  What luck!  She has $400 worth of food to salvage and was wondering if I would take her Prime Rib.  Helloooooo!   Monday smoke problem fixed !!!

  She says she knows I'll respect the cut and she couldn't say the same thing about her kids.  Time to break out the temp probe; twist my arm!

I started this thread and felt obligated.  It's all real basic stuff.  But, I hope it wakes up your taste buds as it did my neighbors !

So, last weekend we smoked on Sunday and Monday.  

Sunday first!

Dutch Oven Fajitas - so tender!  

The skirt steak was sprinkled with Famous Dave's steak seasoning, then in the fridge overnight.  Then on for 5-6 min each side at 350.  Didn't need a IT probe!  The veggies were in a cast iron skillet in the corner of the smoker for about 45 min after a myriad of seasonings - including cumin.  Light bulb moment for me

Then Monday, the gifted Prime Rib got a rub blanket over night.  Sprinkled with seasoned salt and then a marinade I got off of Traeger's recipe website.


On to the smoker - 250 degrees!


Five hrs later and a IT of 134 !!


Perfect!  This is my first smoked Prime Rib !!


And finally, the $$ shot !!


I'm new to this process - as a producer.

   But I've yet to screw anything up.  The temptation to peek into a closed barrel is overwhelming.  But, just let it be and trust!

  The low slow process is hard to screw up when married with a probe thermometer and a clock.  

Next weekend - kids asked for smoked stuffed burgers.  More Q-View to come.
