A while back I bought a 2-pack of chuck tender roast. I had just gotten my SV, had done CSR's and was anxious to do a Chuck Roast. Got it all going and shot a pic to my good friend Bear.
He answered back saying what is that? I was afraid of that, but I went ahead with it anyway.
After all those hours in the SV, browning on the grill and a little rest, it was tough. Got out my slicer and sliced it thin for RB sandwiches. Well the other day I pulled the other half out of the freezer to let it thaw. I was going to go the SV route again, but decided Crock Pot.
After 8 hours in the CP on high it still wasn't melt in your mouth tender. let it cool and put it in the fridge. Two days later I pulled it out and in the oven for another couple of hours.
Edible, but not great, just a tough piece of meat.
So I hate to throw thing out so today I got that sucker out, chopped it up and in the Chili pot.
Been simmering foe hours. Pretty darn good now.
Lesson learned "BUY A CHUCK ROAST" !!!!

Here are a couple of pics

See they didn't look bad

Maybe ?? Chime in if you do. Even my Wife said she never saw a chuck roast look like that.
Good chili though.

Thanks guys.

Or Boa Constrictor Those rascals were sure enough tough.
That last one went 8 hours in the crock pot, 2 hours in the oven and 5 hours in the chili.

Gary

That picture appears to be some cut of round roast. Definitely not chuck.

Great save on the chili.

Kinda what I was thinking and a 25 year old Bull

Did a little searching:

It's not a Round Roast.
Apparently a "Chuck Tender Roast" is different than a "Chuck Roast";

This is what they call a "Chuck Tender Roast".
Looks like what Gary had:

And this is what we know as a "Chuck Roast":

Thanks, I am going to tell the butcher they need to Re-name it "Chuck Tough A_ _ Roast"

Gary

I've seen that called "Mock Tender" or "Petite Filet" out here. Definitely all a ploy of names to fool consumers into thinking its something more than it is.
