For me dang near anything goes on a hotdog, and in various combinations.
From a simple line of cheap yellow mustard and a slice of cheap white bread, to a Chicago Dog and so much more.

Favorites

Mustard and Onion.

Grilled Bacon wrapped dog on a toasted buttered bun, maybe some sauteed sweet onions... But it really doesn't need anything but the meat and bun.

Pretzel bun, Inglehoffer stone ground mustard, caramelized onions.

Completely smothered in spicy Chile con carne, generous amount of crumbled Cotija cheese and chopped Green onions.
Serve on a plate with a spoon or fork, this is not a handheld dog.

Queso dip with spicy Serrano Pico de gallo.

Classic Chicago Dog,
mustard, relish, chopped onions, sliced tomatoes, kosher pickle, pepperoncini peppers and celery salt all piled onto a poppy seed bun.

Kinda surprised by the number of guys who like ketchup but that's cool. I crave corn dogs now and then and will mix ketchup with mustard but that's about it. Like burgers TONS of variations and ways to top and prepare. Plain is tasty if bun is toasted and dog half decent. Cheap dogs with chicken served at cook outs I like basically ruined and charred well and topped with bold stuff I will grab from other dishes since no one ever puts out good dog condiments at inlaws. At home, go to typically is kraut (with apple sauce, onion, bacon grease, bit of Maggi cube) and maybe a little Gludens. Manwich or cinci chili + mustard and onion is always in rotation as is a leftover. I would probably do the Chicago thru the garden more often if it were not a PITA to prep. Not many people talk about it but the infamous Tony Packo "dog" is not one at all but a essentially kielbasa sliced lengthwise so using that instead of dogs is a kinda cool variation. Cuts some slats in the back so it doesn't curl. Wife will throw dogs in my knackwurst and kraut bake as the girls think there's "weird stuff" in the knockers HA. Also, love franks in beans. Would love to geek out with that if anyone has a go to. Some kind of Texas spin would be cool. Do dogs weekly.

On stadium mustard, prefer Stadium but both dang close. For the true stadium dog experience, the dogs are Sugardale and they are held warm foil wrapped so bun is warm... Nuke bun to warm is the hack. For some reason, I've always played around with the buns for dogs and burgers, not many do. Rookie move. Chains like McD do it in advance as part of the bun making. I am known for browning on the grill and buttering and browning on the flat top. Wait til you try a toasted and buttered bun for sloppy joes. One of the main reasons the McMuffin is so good is the muffin is HEAVILY toasted.

Actually Rich, I see they are 2 different brands, both from Cleveland. I have both in my cart, might need to do a side by side?
I worked with a guy that used to travel to Cards baseball games . He came back from a Reds game ( Reds lost ) with a case of Stadium mustard . After that we used to order it by the case . It's my favorite by far .
Need an Ohio guy to tell the story , but I think Stadium is a spin off of Bertman's ballpark ?
Guy worked for Bertmans started Stadium ? Not sure . I need to order some Ballpark to try it .

I can get sugardale dogs here . I need to try the whole experience I guess .

My favorite mustard is Woeber sweet and spicy mustard.

6 or 7 years ago we had planned on cooking 150 brats at work. The week before I was in South Dakota and stumbled across some Woeber's mustard, and bought 3 kinds. It was a big hit.

Since the OP is asking for simple I will go with Mustard but you didn't specify that it just had to be the regular yellow. Regular Yellow is fine, Dijon, Course Ground, Spicy Brown, Honey Mustard, Chinese Hot Mustard, Horseradish Mustard, etc.

Buddy made Coney Dogs on our hunting trip last year. They were good I guess but for the work and mess he had going on I would have passed making them myself, and I tend to make some messes when cooking some things.

I believe that is right. Stadium is much more readily available for some reason but Bertman's is OG. Will grab you some Ballpark. Anyhow, both have only been available to buy in recent times. Back like 30 years ago my parents were in charge our football concession stand and my Dad got in his head to serve hot dogs with the stuff. People didn't think he'd pull it off but he did.

I really like Woeber's horseradish mustard.

They also have a plain horseradish sauce similar to Arby's horsey sauce I really like on beef.

The great burger topping thread got me talking to a few people about what’s on a simple hotdog? Do you put mustard on a hotdog or ketchup on your hotdog?
I’m talking about a basic hotdog so not adding the onions, relish, chili, bacon, cheese, or sauerkraut just your basic hotdog. Is it mustard or ketchup?

I prefer spicy mustard if available
I have a couple buddies that insist it’s ketchup only

So what’s on your dog?
Definitely mustard for me. :emoji_yum:
