OK, as a Canadian, I have to ask.... Why is your smoked pork loin called Canadian Bacon????? 

Us Canadians don't make that stuff.

 We have "Peameal Bacon". A cured/brined pork loin, rolled in ... properly ground yellow peas, or cheaply corn meal.  No smoke.
 
Us Canadians from the south, had to have something to acknowledge our northern kin... low fat, all meat pig... cured and smoked.... to put on a flat bread with hollandaise sauce... kind of a "kicked up" biscuits and gravy.... that's from our southern kin....
