Welcome to SMF! Not sure what cut it is as it looks like a skirt steak but it could be a cut down tenderloin, but that doesn't make much sense.

I once ordered a cut of tenderloin at a restaurant, and it came butterflied like that. I wasn't impressed.

I vote butterflied tenderloin BUT brined overnight in light soy+msg/fish sauce something like that. Low fat cuts like that are like chicken breast and MUST be brined to shine. When I want info I order a few rounds and get chatty with waitress then ask. Paid off a bunch of times.

Heck I don't know what a lot of cuts are in the US let alone something in Indonesia but there are those around this site that might just know
