What is the most tender meat that you have ever eaten? Look for help finding most tender animal meat

Hi everyone,

I make Jerky and I sell it at a local farmers market.  I also have competed at our local state fair this past year.  I did very well but I didn't win over all.  The person that did win used EMU.  I will say it was the most tender meat I have ever eaten.

So I thought I would come here and ask everyone's opinion.  So I ask, what animal gave you the most tender meat that you have ever eaten?

the flavor I an not worried about.  I am looking for ideas for next time.

Also,  does anyone have any good sources for buying exotic meats?

I don't know how you can get more tender than beef tenderloin.

And you would still have that beef flavor.

But that would be some expensive jerky.

The most tender Meat I've ever had has been any of my Smoked Prime Ribs.

However I wouldn't make Jerky out of it.

The most Tender Jerky I've ever had was from Pork Loin, and it tastes just as good as Beef Jerky. IMHO

Well, Bear, if I learned one thing on here it's the value HO!  

With that said, you would have been blown away by the Emu this guy made.  There was barely any chew to it.  I am only looking to use enough so I can complete with it next time.  I won't be using it on a regular basis.  That is unless I hit the powerball anytime in the near future.  lol

Yup---I had Emu one time, about 20 years ago---It was awesome---I couldn't believe it was "Bird Meat" !!!

RS, IMHO I like my jerky with a bit of a bite, tenderest meat for me was the tenderloin from a moose calve that was a roadkill and processed immediately. TASTY and TENDER!

I loved your reply.  Unfortunately, I don't come across many fresh road kill moose.  I agree with you about having a little bite but if you ate this, you would have been impressed.

Ostrich and Emu are similar but Ostrich have a higher yield, bigger muscles. You want to use the Fan Fillet, a very tender muscle off the leg. I consulted for a Farm in PA and have eaten and played with a hundred pounds of Ostrich and Emu meat. Check these guys out. The article isn't too old and they should be able to help...JJ

The jerky I tried was truly like butter.  Any suggestions how to cook/Dry/Smoke the Ostrich to get the texture?

Roaming Acres Ostrich Farm, Lafayette/Hardyston? 

Yep...Give them a call. The Ostrich/Emu community of farmers is not large and they tend to know each other and can tell you who is still around. In the early 90's a bunch of folk thought they would get Rich selling the " New Healthy Red Meat ". Both are very tasty but at the time, sold for $9-12 a pound. Beef Rib Eye and even Fillet Mignon was half that so the general public didn't buy in. Lot of folks lost their life savings on that investment. Now just a handful of farms that cater to the Exotic Meat market...JJ

Thanks Dogman,  Any Idea where I can order Aqxis Deer from?  Since I never even heard of them, I'm thinking it's not going to be easy.

Where i live in florida there are several game ranches where you can go shoot a meat deer . Since most go after trophys
The ranches thin out the herds by selling meat deer . Some of these ranches have 20 different species of deer .

Axis Deer are provably the closest to a whitetail as far as habits and characteristics . They are native to Asia
But game ranches in the US Southern States have large herds of these wily animals. Back to question : they are by far
one of the best tasting natural wild game meats you can enjoy.
