My guess is that it is the trimmings from cutting spares down st. louis style or something along those lines.

those parts from the st louis cut --are usually called rib tips--i think

I would have to agreed with theses guys and say that they were the cut offs of a regular spares. Well did you notice if the spares they also had were trimmed to St. Lous cut???
