What can I do with drippings from smoked chickens

hey gang,

I smoked 2 chickens in shallow tins to prevent the mess and captures roughly 4 cups of chicken dripping juice..

Any ideas as to what I could use it for??

It smelled so rich and flavorful I put in a ziploc bag and froze it

Maybe Chicken noodle, to add a "smoke" flavor to it??

let me know ideas you may have
 
Liquid Gold...The fat makes awesome Smokey Matzo Balls for a cool twist to Chix Soup...Fry Sliced Potatoes and Onions in the fat as a great side or Breakfast dish...The gelled juices are great mixed into Mashed Potatoes, Stirred into Sauteed Mushrooms w/ minced Garlic and Thyme, or use it in Gravies to boost flavor...There was a whole thread just on this subject, when I find it I will post it again...JJ
 
Ahhhh, chicken fat!

Lol... as the founder of YAWYE my advice would be to throw it away!  Aids in clogged arteries!

But, as a member of SMF, you can use it in gravies, soups, stews and broths!  Or anything calling for stock!

To be moderate, however, see if you can use a little less of it and dilute it a little with water or something healthier and improve your health but still provide added flavor.
 
Use it to make chicken and dumplings!! If you have enough for a pot full or if not the chicken noodle idea is awesome too. I've used it to cook chicken thighs in on the stove also. Or you could mix a little flour in and make a gravy for mashed potatoes, throw in some veggies and fill a pie shell with it and make a pot pie. Ok, officially hungry now....

It is either juice or drippings.

From there it is just what you do for great food!

Yes I would keep it for stock but I would use it pretty fast.

At my home we call it schmaltz ,we add fry onion to it and we use it as a spread and for all the thing that JJ Mention
