I was at Sam's Club yesterday and couldn't pass up on a couple of $5 rotisserie chickens. Picked them clean and cubed up all the meat with no firm plan on what I was going to make. This morning I considered quesadillas, chicken salad , several soups and popper casserole before I settled in trying some enchiladas. After glancing at a few recipes it was wing it time. I didn't take pics of the filling. Generally for the filling I tossed the chicken with 2 packets of fiesta ranch mix, added 2 large onions rough chopped and caramelized in butter, 1 1/2 cups minors chicken broth, 1 cup heavy cream, 4 small cans of green chilies and 24 oz of a shredded Mexican 4 cheese blend. Simmered it all and finished by thinking with 1T xanthan gum. Once cooled it all got wrapped in Mission zero carb tortillas. Yielded 28 total. EDIT - despite everyone saying not to change the recipe I plan on bumping tn chicken up to 2 1/2 birds.
Sauce was 1 1/2 cups chicken broth, 32 oz Members Mark white cheese sauce, 16 oz sour cream and 4 small cans of green chilies. Heated in a sauce pan and whished until smooth, 1/2 - 1t xanthan to thicken then poured over the wrapped enchiladas.
Topped off with 32 oz of 4 cheese blend between the two pans.
Baked at 350F for 30 minutes and topped with cilantro.
Double shot of enchilada here plated up with more cilantro , jalapenos and salsa Verde.
Nothing fancy and winged the recipe with mostly on hand ingredients but it turned out great. Very rich. I delivered some to three groups of friends /family who raced about it. I'll be cleaning the recipe up and adding to my recipe book. Thanks for looking!!
