What are you smoking this weekend

I am planning on smoking an 18 pound Turkey and some more pastrami, maybe more. What is everyone else smoking?

I put a 10lb fresh ham in the smoker about 8 this am.  It's looking good.

How are you smoking it, spices, temps, etc? I would like to see that.

I put on a home created rub,  smoking with hickory at 230 degrees.  This pix is six hours in and in the stall.   Cheap cell phone camera.

Looking good, I have to wait until Sunday morning to get my smoke going.

How are you going to prep the turkey?

 

[smokedstanley]

The Turkey is having a nice relaxing soak in a brine bath, quart of apple cider, salt, sugar, sage, thyme, carrots, onion, celery water, and orange. I just rubbed up a couple more pastrami for this weekend also. I will definitely post some more on Sunday.

Wow, that ham looks gooood!! Do you mind if I ask how much salt you used?

I don't really know how much salt is used.  My base  is a commercial rub  that I modify and don't add any additional salt.

That helps me out a lot thank you! I have been looking for a brine that doesn't use a lot of salt. Thanks again!

The pastrami is on, the Turkey goes in an hour. It is 36 degrees outside with rain and wet snow mix.

The Turkey is in. Using the water pan to cook some veggies and catch the drippings for gravy. So good. The snow is just starting to stick.

Just over 6 1/2 hours on the Turkey. The meat was extremely flavorful and juicy. We are ready for Thanksgiving.

Looks good. Did it get a smoky flavor?

Unfortunately not this time. I had to do on my propane grill cause we had 40mph winds today! It definitely had the grilled taste! Next time I'll do it on my Weber Kettle and do with some smoke.

Getting ready for this weekend already. Going to be smoking 11 Boston Butts with an average weight of 9 pounds each. This will be the most butts I have done in one smoke. Should be fun.

Thank you bbquy, it was a nice smoke. Those twelve butts filled a gallon jug with grease. Are you smoking this weekend.
