Hi everytime i make ribs they come out almost to juicy and there wet and none of the fat melted out? Help i need perfect babyback ribs!

Good evening bradsbbq,  Can you tell us how you do the wet ribs?   Have you tried the 2-2-1 method?  Do you use a rub?   How long do you let the rub sit on before cooking. What are you smoking on electric, propane, charcoal?

What temps are you smoking at?

i did 3-2-1 at 225-250 and the fat didnt render out and they were greasy mess. help!

And did you spray them with anything like apple juice or foil them?  Do you know what your actual meat temps were?  AND what did you take the temps with?

I know it sounds like too many questions...but we get you fixed up quickly.

Brad you can save them.  Put them on a rack or a few cups in a pan  add a 3/4" of water to the pan  cover with foil and put in oven 450* for a hour to a hour and half that will render out the fat dry out the meat a bit.

I would say your smoker temps are off on the low end. Make sure your thermometer(s) is reading accurately.

Be sure to check all temperature probes for accuracy.  If these are babybacks use the 2-2-1 method, 3-2-1 for spares.

This could also speak to the quality of the meat...

Cooking in the temp ranges you mention using 3-2-1 should turn out perfect ribs.  If they are not then you have a low temp issue like JP said.d

Good luck,

Bill
