Hello all!

I was tooling around the net looking for tips and whatnot for breaking in my new smoker and found this site.  Nice place you have here.  Hope to have some good reviews of my chicken that is currently smoking.  :)

Thanks!  I guess I should give a little more info.

I've been an avid griller for some time now.  I got the idea to smoke some ribs on my gas grill for my mom's b-day.  I got a cast iron box, filled it with chips and put it on the bottom rack with a turkey roasting pan full of water and apple juice.  I put the ribs on the top rack and left it for a few hours until they were up to temp.  Slathered them when they were within 20 degrees of done and they were dang good.  Problem was it used a LOT of gas and took longer than I thought it should have.

This Christmas I got a smoker.  Just a basic big red Brinkman.  Seems like it'll be great although there isn't any temp control.  Should be a good starter!!  Looking forward to getting into this!

First off Welcome Jager to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

I'm about a 1/2 hr from taking out the chicken.  I'll take a pic for possible posting... if it's good.  lol  If not expect questions.  I feel pretty confident though, as I've been a hardcore griller for some time.  :)  And I started pretty simple: whole chicken with a spice rub on a can (brined for a few hours in apple juice, salt, and water).  In the can apple juice, fresh lime juice, cracked pepper, some chili powder, and a few minced cloves.  It smells good!!!  Can't wait (plus the couple beers I've had waiting has really upped my appetite!! lol)
