Hello to all,
Just delivered my new smoker yesterday [May 22]. My current one of 29 yrs does not have the baffle or tuning plates.
I know I am going to have to experiment with it and test it, but was seeking experienced smokers that have pits w plates and listen to your general to specific suggestions on how to cook with them. Enclosed are some pics to provide you with the dimensions. I use both oak and pecan and typically face the firebox to the prevailing winds.
