Hadn't smoked anything for the past couple weeks, so with having the holiday off I decided to pick up a couple racks of Ribs for a quick smoke.

Trimmed em up a bit a got some of my favorite rubs on them.

Like usual, the WSM 22 performed great. Even with cold weather and slightly windy conditions, I was able to maintain around 275 for the whole smoke. I did 2 hours and 20 minutes on Hickory and Cherry wood, followed by 1 hour wrapped, and finished it off with a 20 minute glaze.

Back to work tomorrow, but have a good leftover lunch in store!
