Crap, This sucks. I cant smoke this weekend. Wife's best friend is coming to Nashville for a week and we have to entertain them and show them around. (party on the strip) I am willing to try something next weekend and post it if no one objects?

Seriously just smoke when you get a chance and post it up. Just wanted to do something to get everybody back going after the hiccup we had. Great way for new and old to join in together.
 
Well I think I will run the Big Chief one more time. I hate to do it anymore as some of you know, I have to wrap it in insulation to get the temps up. I pulled the remaining Salmon fillet I have from the freezer. Made up a glaze of Maple syrup, molasses, Orange and Lemon Zest with a dash of black pepper. Will throw it on the smoker tomorrow, (Sunday). Post pics when shes done.
 
Anybody got any Sunday smokes to add to this????
 
My bad must of mis-read the time stamp, still think it was great!
 
Well here it is. My last Salmon fillet. For this one, I used 1/2 cup Maple syrup, 2 tsp orange zest, 2 tbl lemmon juice, 2 tbl molasses. 1/2 tsp black pepper. I totally forgot that I had this in the smoker. I was out in the shop working on my wood smoker, when my son came in and said that what ever I was smoking, smelled good. I droped everything to go retrieve my Salmon. It was in there for almost 6 hours (YIKES). It came out a little drier than I wanted, but it tastes fantastic. The wife really likes it as she is partical to having her fish and steaks dry. Oh well, was not a total loss. Has a good color, and a great carmalized texure to it. Tonight for dinner, I grilled up some New York Strip. Completly covered them in Kosher salt as that one post said to do. Man, is that the best kept secret. Will never do another steak without the salt treatment again. Fantastic.
